Chicken Quesadillas with Red Pepper & Cheese Spread

Ingredients

  • 1 store-bought rotisserie chicken
  • 8 flour tortillas
  • 1 jar Harry & David Red Pepper and Cheese Spread
  • 8 ounces shredded Monterey Jack cheese
  • 1 cup sliced green onions
  • Cooking spray
  • 1 cup sour cream

Directions

Strip and cut up entire chicken. Spread 2 tablespoons Red Pepper & Cheese Spread over half of each flour tortilla. Top with a layer of chicken, followed by cheese and green onions. Fold each tortilla in half. Spray both sides of tortillas with cooking spray and place in sauté pan or on grill. Once cheese has started to melt and tortilla is browned, flip over and brown other side. Cut into wedges and serve with sour cream.
