Artichoke Red Pepper Pasta Roll-Ups

Ingredients

  • 1 jar Pasta Sauce, divided
  • 1 (15-oz.) container ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 large egg, slightly beaten
  • 6 lasagna noodles, cooked and drained
  • 1 (11-oz.) jar roasted red peppers, drained and chopped
  • ¼ cut chopped fresh oregano
  • 1 jar Harry & David® Artichokes Laced with Merlot

Garnish

  • Shredded parmesan cheese
  • chopped fresh oregano

Directions

Preheat oven to 350°F. Spread half of pasta sauce evenly on bottom of a 9″ x 13″ pan. Combine cheeses and egg, stirring well. Spread mixture evenly on each noodle. Sprinkle with peppers, oregano, and half of Artichokes Laced with Merlot. Roll each noodle up, starting at the short end. Cut in half, then place (cut side down) in prepared pan. Cover and bake for 30 minutes. Remove cover and bake 15 minutes more, or until thoroughly heated.

Heat pasta sauce and remaining Harry & David® Artichokes Laced with Merlot in saucepan and serve with Roll-ups.
