Royal Riviera Pear Salad

Ingredients
- 1 tablespoon plus 1/2 cup olive oil
- 3/4 cup diced shallots
- 8 slices bacon - cooked and crumbled
- 5 tablespoons sherry vinegar
- 8 cups baby salad greens
- 3 ripe Harry & David Royal Riviera Pears (peeled and sliced thin, 3 slices per sandwich)
- 2/3 cup crumbled Feta cheese
- 1/3 cup chopped roasted cashew nuts
Directions
Heat 1 tablespoon of oil in sauté pan. Add shallots and sweat until they begin to brown. Add pre-cooked crumbled bacon, vinegar and 1/2 cup olive oil to pan to heat. Pour dressing over mixed greens while still hot. Top with pears, cheese and nuts and toss lightly. Serve immediately. Serves 6.
