Wasabi Pea Goat Cheese Salad

Serves: 6

Salad Ingredients

  • 1 ½ cups of Harry and David® Wasabi Peas
  • 1 12-oz. stick of goat cheese
  • 4 cups of mixed greens
  • 1 cup olive oil
  • 1 cup whole snow or snap pea pods

Dressing Ingredients

  • ½ cup olive oil
  • ½ cup rice vinegar
  • 1 ½ tablespoons Wasabi paste
  • pinch of sugar
  • pinch of salt

Directions

In food processor, crush wasabi peas to a coarse texture. Transfer to a deep bowl. Use thread or dental floss to slice goat cheese in ½″ slices. Dip fingertips in bowl of olive oil, and dip cheese rounds in oil. Then roll cheese in crushed wasabi peas. Place coated rounds on a foil-covered baking sheet and bake for 8 minutes at 300°F, until cheese is soft to touch, but still holding its shape. Allow to cool 5 minutes. Toss mixed greens with cleaned and de-veined peas, and place servings on individual plates. In separate bowl, combine wasabi paste and vinegar until well mixed. Add ½ cup olive oil, sugar and salt. Mix well and drizzle over greens. Place 2 goat cheese rounds atop each salad plate and serve with a lemon wedge.
