Heat 1 Tbsp of oil in sauté pan.
Add shallots and sweat until they begin to brown.
Add pre-cooked crumbled bacon, vinegar and 1/2 cup olive oil to pan to heat.
Pour dressing over mixed greens while still hot.
Top with pears, cheese and nuts and toss lightly.
