Royal Riviera® Pear Salad

1 Tbsp plus 1/2 cup olive oil
3/4 Cup diced shallots
8 slices bacon- cooked and crumbled
5 Tbsp sherry vinegar
8 cups baby salad greens
3 ripe Royal Riviera® Pears - peeled, cored and sliced
2/3 cup crumbled Feta cheese
1/3 cup chopped roasted cashew nuts


Heat 1 Tbsp of oil in sauté pan.

Add shallots and sweat until they begin to brown.

Add pre-cooked crumbled bacon, vinegar and 1/2 cup olive oil to pan to heat.

Pour dressing over mixed greens while still hot.

Top with pears, cheese and nuts and toss lightly.

Serve immediately.
