Easy Chicken Molé

6 skinless boneless chicken breasts cut into four pieces
2 tablespoons ground cumin
1 tablespoon cinnamon
1 tablespoon olive oil
1 large sliced onion
2 cans (14 ounce) chopped tomatoes with green chilies (do not drain)
1 cup chicken broth
2 tablespoons minced canned chipotle peppers in adobo sauce
1 ounce Harry and David® dark choclate truffles


Coat chicken on all sides with cumin and cinnamon. Spinkle with salt and pepper.

Heat oil in large sauté pan.

Add chicken and sauté until brown.

Remove chicken to a plate

Add sliced onion to the pan and cook, stirring until soft and lightly browned.

Return chicken to pan.

Add tomatoes, broth, chilies and chocolate truffles and bring to a simmer.

Reduce heat to low and simmer for about 20 minutes or until chicken is cooked thru.

Serve over white rice.
