Winter is the season of grapefruit. (Yes, oranges, too, but it’s grapefruits’ time to shine!) This remarkable citrus, known for its mouth-puckering flavor, can be added to cocktails, fish dishes, and much more, like, well, salads. This avocado grapefruit salad takes delicate arugula greens and layers buttery avocado with tangy grapefruit for a refreshing winter meal.

Oh, and the best thing about this avocado grapefruit salad? Grapefruits are still in season in spring when the weather warms, so don’t be shy about enjoying this salad outside. After a season spent indoors, you’ll gladly oblige.

Avocado Grapefruit Salad

For the dressing

  • ¼ cup fresh lemon juice
  • 2 teaspoons Dijon mustard
  • ½ teaspoon sea salt
  • 1 teaspoon ground pepper
  • ½ cup extra-virgin olive oil

For the salad

  • 8 ounces baby arugula (or lettuce of choice)
  • 1 large avocado (peeled and sliced)
  • 1 grapefruit (peeled and sectioned with membranes removed)
  • 1 fennel bulb (thinly shaved)

For the dressing

  1. Whisk together the lemon juice, mustard, salt, and pepper.
  2. Gradually whisk in the olive oil until combined and set aside.

For the salad

  1. Gently tear the greens into bite sized pieces and arrange on four chilled plates.
  2. Alternate slices of avocado and grapefruit sections on greens.
  3. Top with shaved fennel and drizzle the dressing generously over the salad. Serve and enjoy.
