Pear mimosas are a fresh way to bring pear flavor to brunch or a seasonal gathering. Harry & David Hard Pear Cider and sparkling wine give each glass a crisp, bubbly base, while homemade pear syrup adds a touch of sweetness. The syrup starts with ripe Comice pears and vanilla; for a warmer fall or winter version, use brown sugar, cinnamon, and a pinch of spice. Finish with a thin pear slice or a sprig of rosemary, and serve while the bubbles are lively.

- 1.5 Cups Ripe Comice Pears (Diced)
- 12 Cup Brown sugar
- 1 Cup Water
- 2 Cinnamon sticks
- Pinch Nutmeg, Clove, or Ginger (Or all three)
- 3 Oz H&D Hard Pear Cider
- 2 Oz H&D Sparkling Wine
- 12 Oz Pear Simple Syrup (or Spiced Pear Simple Syrup)
- 1 Smalll Lemon
- Combine pears, sugar, vanilla, spices and water in a saucepan. Bring to a simmer over medium to medium-high heat.
- Let simmer for 15-20 minutes, smashing the pears with the back of a spoon as they soften.
- Strain the syrup over a glass measuring cup, using a fine mesh strainer to remove the pear pieces and cinnamon sticks. Press down on the pears to extract as much goodness as you can. Let cool before use.
- Transfer syrup to a jar or bottle. Store in the fridge for up to 2 weeks or add a splash of vodka and refrigerate for up to one month; if you notice any spots, discard and make a new batch.
- Prepare: Thinly slice pear wedges and toss in a bowl with cold water and a squeeze of lemon juice (helps to prevent pears from browning). Put a small amount of simple syrup in a small shallow dish and in another small shallow dish put cinnamon sugar. Dip glass rim in simple syrup and then in the cinnamon sugar.
- Assemble: To a champagne flute, ½ ounce simple syrup, 3 ounces of hard pear cider, and top with 2 ounces of sparkling wine.
- Garnish: Be sure to garnish each drink with an apple slice and one half of a rosemary or thyme sprig.
- Serve: Enjoy immediately.
